FIELD: food industry, dairy industry.
SUBSTANCE: the present innovation deals with applying the technology to manufacture condensed milk, moreover, it deals with additional supplementing condensed milk with a vitamin additive and a bacconcentrate. As a priming material it is necessary to apply a priming paste, as a vitamin additive - a vitamin complex that contains vitamins A, C and B group. Vitamin complex should be added at the quantity of 0.02-0.05% against the mixture weight. As a bacconcentrate one should apply microorganisms of Bifidobacterium longum 379 and Bifidobacterium adolescentis C-54 types which should be introduced simultaneously at the ratio of 1:1, at the quantity of 1-5% against the product's weight. The innovation enables to obtain the product of increased probiotic, prophylactic and biological properties.
