FIELD: dairy industry, in particular ice-cream production.
SUBSTANCE: claimed ice-cream includes milk, cream, sand sugar, stabilizer, vitamin complex, and bacterial concentrate. Vitamin complex includes vitamins A, C and B group. As bacterial concentrate combined bacterial concentrate containing Bifidobacterium lognum B 379 M, Lactobacillus acidophilus 97, Propionibacterium shermanii 12 AE is used. Bacterial concentrate is introduced in ratio of 1:1:1 in amount of 1-5 % based on mixture mass.
EFFECT: product with probiotic, prophylaxis, and biological properties; enhanced ice-cream assortment.
