FIELD: fat-and-oil industry, possible use for determining content of phospholipids in vegetable oil.
SUBSTANCE: method for determining content of phospholipids in vegetable oil includes preparing a sample of vegetable oil, measuring value of electric conductance of sample, computation of content of phospholipids from formula based on calibration curve, built in coordinates "content of phospholipids - value of electric conductance". Measurement of electric conductance value for a sample of vegetable oil is performed at alternating current at temperature of 20-250°C.
EFFECT: possible receipt of more precise results, and also determining at temperature of realization of technological processes, in other words, to use method for operation control over mass share of phospholipids "in flow".
