FIELD: fat-and-oil industry; production of hydrated vegetable oils. SUBSTANCE: methods provides determination of difference in content of phospholipins in nonrefined and hydrated vegetable oils. This difference is found by measuring electric conductivity of nonrefined and hydrated vegetable oils with subsequent determination of difference in obtained values of electric conductivity. Maximum difference in values of electric conductivity corresponds to maximum efficiency of hydration process. Device to determine efficiency criterion of vegetable oil hydration process consists of pipeline for nonrefined oil and pipeline with electric conductivity pickups which are connected with recorder. Invention provides determination of efficiency in continuous flow. EFFECT: reduced time taken for determination of criterion of efficiency of hydration process and cut down expenses for realization of method. 2 cl, 1 tbl, 1 dwg
