FIELD: confectionery industry, in particular, production of candy floss and like products.

SUBSTANCE: method involves plasticizing return wastes of hard-boiled sweets in extruder at temperature of 120-130 C; dosing through peripheral outlet opening of extruder onto rotating working tool where filaments are formed on air pad by blasting of heated air along curved path. Apparatus has working tool mounted on shaft for rotation around axis and equipped with blades fixed on side surface of working tool casing. Working tool has immovable cover, receiver reservoir formed as cylindrical tray with window provided in bottom and annular trough positioned below blades, and immovable heater. Working tool consists of spraying disk, supporting drum, conical and curved guiding inserts. Shaft of working tool in the region adjacent to heating member formed as air heating device is equipped with cuts communicating through curved channels with its internal cavity which has outlet oriented toward end surface of spraying disk in the form of openings running along curved path. Anti-adhesion coating is applied onto end surface of spraying disk and internal surface of cover. Vertical extruder with peripheral outlet openings is additionally positioned above working tool. Path of openings is defined as curve and is described by equation: f(r)=ar2+br+c, where r is radius of disk, m; a, b, c are coefficients indicative of condition of maximum absolute velocity of product at going down of disk at predetermined parameters of the latter.

EFFECT: increased usefulness of caramel production, avoiding adherence of product to cover, increased efficiency, reduced friction coefficient against surface of working tool and channels of apparatus, and reduced consumption of power for driving of working tool.
