FIELD: food processing industry.
SUBSTANCE: mew foodstuff is produced by raw material preparation, drying thereof to intermediate humidity, treatment with chitosan solution, drying in gaseous heat carrier with pulsed microwave irradiation up to residual humidity of 3-5 %. Product is packed in packets made of combined material such as polymer-foil-polymer.
EFFECT: new foodstuff with unique organoleptic characteristics.
