FIELD: biotechnology, may be used in food-processing and microbiological industry, medicine and agriculture.
SUBSTANCE: method involves heating-through aqueous yeast suspension in the presence of enzyme preparation produced on the base of strain of fungi Trichoderma reesei BCM 18.2/CC in an amount of 0.05-0.15 % by weight of absolutely dry yeast during 4-5 hours at temperature of 45-55 C; introducing oleic acid in an amount of 0.1-0.3 wt% in reliance on absolutely dry yeast; holding for 10-15 hours.
EFFECT: provision for more complete hydrolysis of protein and hydrogen and obtaining ready product with increased nutrient value.
