FIELD: food-processing industry.
SUBSTANCE: method involves washing eggs and exposing to thermal processing; shelling; holding in edible salt solution and smoking; after procedure of holding eggs in 5-7%-edible salt solution during 2-3 hours at temperature of 15-20 C, smoking during 20-30 min at temperature of 20-25 C in electrostatic field; packaging eggs into hermetically sealed vacuum package and, before sending for realization, holding at storage temperature of 5-10 C during 8-10 hours. Continuous smoking apparatus has smoking chamber with doubled walls, egg inlet and outlet members, smoke feeding and discharge branch pipes, corona electrodes, and inclined roller conveyor with egg separating partitions. Roller conveyor is provided with rollers having grooved surface. Egg separating partitions are made from material having low friction coefficient and are positioned perpendicular to rollers. Corona electrodes are positioned between rollers and made in the form of metal wire lengths having diameter of 0.5 mm, said metal wire lengths being secured on isolators enclosed in protective cylindrical casings with excessive air pressure therein. Air is admitted into casings through opening from cavity between outer and inner walls of smoking chamber. Egg outlet member is equipped with rotary gate preventing exit of smoke from smoking chamber.
EFFECT: improved quality and appearance of ready product, intensified egg smoking process, increased efficiency of equipment, and reduced consumption of power.
