SUBSTANCE: the present innovation deals with the methods to obtain food biologically active additives out of the brain of Pinnipedia, for example, seals. The method deals with reducing the brain of Pinnipedia, for example, a seal followed by extraction with organic solvent and purification of the obtained extract against admixtures to isolate lecithin, moreover, before reducing one should freeze a seal's brain up to -25-30°C; reducing procedure should be fulfilled in a chopper at the frequency of working organ rotation ranged 4400-4500 rot./min up to particles size being 1-2 mm; extraction should be carried out with isopropyl alcohol at about 50-70°C at mixing for about 20-30 min, moreover, the reduced seal's brain and isopropyl alcohol should be taken at the ratio of 1:3-1:5, correspondingly, and purification of the extract obtained should be fulfilled with ester during 10-30 min at -20°C - +20°C at the ratio of 1:2-1:10, correspondingly followed by isolation of lecithin. Moreover, as ester one should apply methyl acetate, ethyl acetate, propyl acetate, isopropyl acetate. The innovation enables to accelerate the process for obtaining lecithin, increase its output and quality, increase the content of biologically active compounds, phosphatidylcholine, in particular.
