FIELD: food processing industry.
SUBSTANCE: invention relates to method for production of food protein concentrate from sunflower seeds containing chlorogenic and caffeic acids not more than 0.02 %. Claimed method includes preliminary grinding and defatting of sunflower seeds (at +4°C to prevent protein melting) with light petroleum (hexane also may be used), grinding thereof to produce particle size of 0.25 mm. Obtained protein flour is treated with succinic acid aqueous solution under the next conditions: succinic acid concentration 2-9 %, treatment temperature of 50-70°C, treatment period of 17-30 min; duty of water of 1:10-1:15; pH 4.5. After three-five treatment processes under active shaking protein product is washed with water to remove of total amount of succinic acid. Obtained protein concentrate is dried at 40-50°C and ground.
EFFECT: target food sunflower protein with light color and improved quality.
