FIELD: food industry.
SUBSTANCE: invention relates to production of protein concentrates from vegetable raw materials and can be used in food industry. The sunflower seeds are preliminarily couched for 3 hours at the seeds humidity of 60±2% and temperature of 25±1°C and dried at 40-50°C up to humidity of 5±0,5%. After that the purified seeds are ground and defatted at +4°C. Then they are dried until the solvent is completely removed and again ground to obtain protein flour. Phenol compounds are extracted by succinic acid solution to obtain 0.02% maximum of chlorogenic acid and caffeic acid each in the flour and the solid phase and liquid phase are seperated centrifugally. The solid residue is washed and dehydrated so the residual moisture is 5%.
EFFECT: invention enables to produce the target product without using toxic or inseparable reagents and that contains minimum phenol compounds and having light colour.
