FIELD: methods for preparation of wood chips for production of smoking smoke used in the food industry for smoking of first and meat products.
SUBSTANCE: the method consists in crushing of the wood raw material, sorting of the crushing products according to the size and drying, drying is conducted in two stages. An the first stage the relative humidity of the wood chips is brought to 20-35 percent, then at this relative humidity the wood chips are cured during 30 to 80 min at a temperature of 50 to 70 C in a thermostatic chamber, after that in the second stage in the drying chamber the chips relative humidity is brought to 10 to 15 percent. As a result, the accumulation of ballast and toxic substances, forming acid in the structure of the prepared wood chips is reduced, thus their ingress in the food products is reduced at a subsequent pyrolysis of the prepared wood chips. Besides, the problem of disintegration of complex carbohydrates-hemicelluloses to simple sugar is solved in the stage of chips preparation.
EFFECT: prevented ingress of complex carbohydrates in the food product at smoking.
