FIELD: food-processing industry. SUBSTANCE: method involves simultaneously producing smoking preparation and charcoal during single process of thermal destruction of basic wood. Thermal destruction process is conducted in the absence of oxidant. Basic wood product subjected to thermal destruction in the presence of oxidant is not solid residue (charcoal), but gas-vapor mixture. The process is conducted at temperature of 350-500 C. EFFECT: increased efficiency and improved quality of smoked product. 4 tbl
