FIELD: food industry.
SUBSTANCE: disclosed is a method for flavouring pre-cooked sushi, rolls, sashimi during their delivery with the acquisition of a smoked aftertaste. Preliminarily prepared sushi, rolls, sashimi are packed into a portion container, the portion container is filled with smoke produced from the smoke generator in the process of burning wood chips for smoking, and placed into a packing container. Then it is delivered to the destination point for 5-180 minutes at temperature of 3-27 °C.
EFFECT: invention is aimed at reduction of product preparation time.
