FIELD: food industry.
SUBSTANCE: invention relates to food processing methods, notably to the smoking methods using natural smoke. Proposed organic heat-activated material generates aromatic smoke for smoking in-process food products; the material consists of a mixture of wood chips and/or sawdust, and/or shavings of main component, and flavoring substances. Thereby the basic component consists of alder and/or beech and/or oak which content is from 70 % to 90 % of the total weight of the mixture, and the flavoring substances involve thyme or thyme and juniper berries, and/or rosemary leaves and/or rosemary stems which content is from 10 % to 30 % of the total weight of the mixture. Thereby the organic material additionally contains the spices including pepper and/or garlic which content is 0.5 % of the total weight of the mixture.
EFFECT: invention provides a reduction of the harmful substances contained in the smoke fume used in food processing, additional antiseptic properties of smoke fume, and strengthening food aroma and flavor.
