FIELD: wood processing industry.
SUBSTANCE: invention relates to the woodworking industry, in particular to the production of wood chips for the production of smoke fume for smoking food products. The method for production of wood chips for the production of smoke fume includes crushing of wood raw materials, sorting by the size of the chips and hydrotreatment with subsequent drying. Moreover, hydrotreatment is carried out by soaking the chips in water for 3-12 hours at a temperature of 20-50°C. Subsequent drying is carried out at a temperature of 85-100°C for 5-10 hours, bringing the relative humidity of the chips to 10-20%. In addition, an alkaline agent in the form of sodium bicarbonate is added to the water for hydrotreatment at a ratio of 1 to 10% of the mass of the initial chips. Hydrotreatment of wood chips in water is carried out at a ratio of the weight of the initial wood chips to the volume of water of 1:3-1:5.
EFFECT: invention provides an expansion of the types of wood in the production of wood chips for fume smoking and improves quality when using traditional wood species.
