FIELD: food engineering, in particular, bird's carcass processing technique used in bird's carcass processing lines.
SUBSTANCE: apparatus has working device comprising rotor with supporting members and pushers, pressure-force disk and immovable squeezing guide. Pressure-force disk is positioned above squeezing guide which is additionally equipped along the entire length thereof facing end surface of rotor with round-section rod contacting with pressure-force disk so that at contact point longitudinal axis of rod section is extending in horizontal plane dividing disk across its thickness into two equal parts.
EFFECT: improved quality of processing of bird's carcass.
