FIELD: food-processing industry.
SUBSTANCE: food emulsion contains ground cucumaria, chitosan solution, cellulose food additive, fish fat, and glucosamine. Chitosan solution and cellulose food additive are introduced into mixture in the form of homogenized complex including acetous chitosan solution and aqueous solution of cellulose food additive. Said components are used in predetermined ratio.
EFFECT: soft aerated consistency of food emulsion which may be recommended as prophylactic food for people suffering locomotive system diseases.
