FIELD: food industry.
SUBSTANCE: the present innovation deals with manufacturing canned concentrates of first-course dishes for cosmic nutrition. The components should be prepared according to conventional technology. The prepared carrots, parsley root and onions should be cut, fried in melted butter and reduced upon a chopper; the prepared fish fillet should be cut, roasted in melted butter and reduced upon a chopper; the prepared potatoes should be cut, blanched and reduced upon a chopper; the prepared tarragon greens should be frozen, preferably, slowly, and reduced upon a chopper; the prepared pickled cucumbers should be reduced upon a chopper. The above-mentioned components should be mixed with fish broth, common salt and a CO2-extract of the preset micromycete type biomass. The mixture obtained should be packed into aluminum tubes followed by sealing and sterilization. The innovation enables to manufacture canned food being of increased digestibility.
EFFECT: higher efficiency of manufacturing.
