in amount of 50-98 mass % based on composition (in formula t is integer; R1, R2 and R3 are independently hydrogen or acyl group, and at least one from R1, R2 and R3 is hydrogen or short C2-C6-acyl group, and at least one from R1, R2 and R3 is long unsaturated C10-C20-acyl group). Claimed composition prevents of decreases water transferring from one food material into other food material.
EFFECT: foodstuff having no deteriorations of stability and organoleptic characteristics.
