FIELD: food industry.
SUBSTANCE: invention is related to food industry and may be used in production of bakery products. Method includes preparation of composite mixture from dietary fibers of sugar beet, wheat bran and enriching agent "Farkosan" in ratio of (34-36):(40-41):(26-23). Prepared composite mixture is mixed in ration of 1:5 with electrically activated water solution with temperature of 48-52 °C with parameters of pH 9.0 and oxidation-reduction potential (-691) mV. Then mixture is matured for 38-42 minutes, and dough is kneaded from prepared composite mixture, baking wheat flour, suspension of pressed baking yeast, solution of table salt and electrically activated water solution. Dough is sent for fermentation, dressing, proofing, and proofed dough pieces are baked.
EFFECT: production of bakery products of increased nutritious value, improvement of products quality by organoleptic and physically-chemical indicators and increase of term of their freshness preservation.
