FIELD: food industry.
SUBSTANCE: recipe components are prepared. Onions, garlic and hot pepper are cut, browned in melted butter and minced. Ginger root is minced and browned in melted butter. Peanuts are fried, peeled and minced. Coriander greens are frozen and minced, and also shrimp meat is minced. Mincing is done in mincer. Specified components are mixed with coconut milk, lemon juice, fish broth, tomato paste, table salt and CO2-extract of black bitter pepper. Then prepared mixture is packed into aluminium tubes, sealed and sterilised. Assimilability of preserved food amounts to 5.7·104, and assimilability of dish that is used for preserved food production amounts to - 4.6·104.
EFFECT: preparation of preserved food with high assimilability.
