FIELD: food industry.
SUBSTANCE: method includes rinsing of pre-hulled grain and/or legumes seeds and nuts mixture with water, soaking during 5-25 hours at 10-40°C in water or aqueous low-alkali solution of sodium carbonate or bicarbonate in ratio from 1:2 to 1:10. Mixture is then pasteurised or sterilised and milled simultaneously. Insoluble sediment is separated by filtration. Then product is pasteurised and/or sterilised. Necessary taste, smell and colour are imparted. Product may be dried out until powder state.
EFFECT: development of effective method of vegetable milk production from grain cultures.
