FIELD: food industry.
SUBSTANCE: method for producing plant-based milk includes cleaning bean or pea seeds from impurities; soaking in drinking water of the centralised drinking water supply system, treated with an electromagnetic field; germinating the seeds in the automatic moisture content adjustment range from 40 to 90% and reaching a seedling length of 2 to 3 mm; the germinated seeds are washed under running water, ground, and extracted at a hydraulic modulus of 1:3 to 1:6 to a finely dispersed state, and the plant-based milk is separated from the sediment by filtering.
EFFECT: plant-based milk produced by the claimed method has a high nutritional and biological value and better organoleptic properties.
