FIELD: food industry.

SUBSTANCE: invention relates to the food industry. Disclosed is a method of processing soya beans to produce soya milk and okara, according to which preliminarily soaked soya beans and vegetable or animal oils or mixtures thereof are added to pre-heated to 72–75 °C water at a ratio of water : oil of 1:0.02–1:0.15, as a result of which a stable emulsion of the introduced oils is formed, heated to 100–110 °C with hot steam and held at this temperature for not more than 3 minutes. Produced mixture is divided into soya bean milk and okara. Invention also discloses a method for production of soya cheese including soya beans processing by the above method, removal of okara, addition of coagulant to produced soya bean milk, maintenance, exposure of the obtained mass to self-pressing with subsequent pressing.

EFFECT: invention allows to manufacture products with increased food and energy value, as well as absence of expressed bitter savor.
