FIELD: food industry.
SUBSTANCE: invention relates to meat industry, precisely to methods of packing and production of canned meats, which are made mainly from lumpy raw. The method of canned meats packing includes flushing of thawed or cooled meat raw. Hereafter it is salted, formed, packed under vacuum in thermo forming film, which has barrier properties and put in metal cans, notably that spaces appeared in cans are filled with drinking water. Hereafter cans are closed, sterilized using specific regime and cooled. Bird's carcasses weighting from 500 g to 5000 g or livestock's carcasses weighting from 500 g to 5000 g are used for canning.
EFFECT: development of effective packing method of canned products.
