FIELD: food production process.
SUBSTANCE: method includes preserved food production out of carcasses of poultry with weight from 800 till 5000 g or carcasses of animals with weight from 800 till 6000 g. The method includes preparing of meat materials, forming of carcasses, placing the whole carcase into in reservoir with spices and plant raw material in the amount prescribed by the formula, sealing and sterilisation. Sterilisation is performed according to the modes: heating 20-30 min, sterilisation 80-210 min at the temperature of 120°C and under the reverse preasure of 0.22-0.25 MPa till obtaining sterilised effect of not less than six relative minutes, cooling 20-90 min till the temperature of 35°C. Thus finished product is produced - meat cans.
EFFECT: invention allows preparing of canned products of high quality out of the whole cascades of poultry or domestic animals, ready to serve after heating.
