FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to confectionary and method of fancy chocolate goods formation. Chocolate mass is exposed to tempering. A form for chocolate mass formation is prepared at the same time. The solid form is collapsible and consists of separate sections mutually shifted towards one another. Before formation aluminium foil is firmly fixed on the inner surface of each section and form is heated. Uniform layer of prepared chocolate mass is spread over the inner surface of each section and then it is cooled in a refrigerator. The sections of the form are joined so that consolidated construction is formed and the form is filled with chocolate mass completely. The form with chocolate mass is cooled. Hardened chocolate goods are taken out from the form by detaching of separate sections. Hereafter the goods are additionally cooled. After additional cooling chocolate goods are treated by rubbing equipments, inequality and roughness are eliminated.
EFFECT: guarantee of possibility to produce chocolate figures of complicated tridimensional construction and take out the goods from the form without damage of the surface.
