FIELD: fat-and-oil industry. SUBSTANCE: sunflower oil production process includes separation of seeds from impurities, conditioning, grinding seeds and nuclei, wet heat treatment of squeezed stuff, peeling, pressing, and refining. Grinding is accomplished in two steps: coarse grinding to 3-5% of unground seeds content and aftergrinding. The latter is carried out under oxygen-free conditions in closed space of press-chamber of press. Wet heat treatment of squeezed stuff is carried out at 103-108 C, and peeling and pressing are conducted in nitrogen atmosphere with oxygen level no higher than 1%. Refining process, including acidic hydration, bleach wash, winterization, physical deoxidation, and deodorization, is accomplished in two steps: coarse refining on vibrosieves and fine one on plate-type filters. Complete refining cycle is realized in vacuum. Additionally refined deodorized oil is cooled in sealed heat exchanger and saturated with nitrogen (oxygen level no higher than 1%), after which bottled, liquid nitrogen being added into gas space of bottles prior to be sealed. Resulting oil is characterized by reduced peroxide number and reduced content of primary and secondary oxidation products.
