FIELD: fat-and-oil industry. SUBSTANCE: in a vegetable oil production process including separation of seeds from impurities, conditioning, grinding of seeds and nucleoli, moisture-hot treatment of pulp followed by pressing, cleaning, and refining, said moisture-hot treatment is carried out at temperature not exceeding 108 C and said moisture-hot treatment is conducted under nitrogen atmosphere. Refining can be accomplished involving freezing and deodorization techniques. Cleaning is carried out in two stages: first on vibrosieves (primary cleaning) and then on plate-type filter (fine cleaning). EFFECT: improved quality of product due to reduced peroxide number and simultaneous preservation of natural biologically active compounds in product. 3 cl, 1 tbl
