FIELD: food industry.
SUBSTANCE: invention relates to pectin production, specifically to technology of obtaining pectin substances from wine industry wastes. Method for producing a pectin extract from grape stalks includes preliminary treatment of vegetal raw materials, exposure to ultrasonic waves on the treated raw materials for 24–26 minutes, hydrolysis, filtration and concentration. Grape stalks are used as vegetal raw materials. Grape stalks are washed under the action of ultrasonic waves with frequency of 40 kHz and further processed in an extremely low frequency electromagnetic field with frequency of 100–1,000 Hz for 15 minutes. Hydrolysing agent used is water. Treated grape stalks are added to the water at ratio of 1:10 to ensure autohydrolysis under the action of their own organic acids. Mixture is maintained for 1.5–2 hours at temperature of 75–80 °C with constant stirring, the obtained mixture is filtered and the obtained mixture is concentrated to content of pectin substances of 4.2–4.6%.
EFFECT: invention is aimed at increasing output of pectin substances.
