FIELD: food industry.
SUBSTANCE: invention relates to the food industry, and in particular to methods for producing extracts for dessert sauces of jelly confectionery products from vegetable raw materials. The method for obtaining extracts from citrus peel involves preparing, grinding, making a mixture of fresh or frozen citrus peel and water in a ratio of 1:2 or dried in a ratio of 1:6, adding 1 wt. % iota-carrageenan or gelatin from the resulting mass. Next, ultrasonic treatment is carried out at a frequency of mechanical vibrations of 22 kHz and an intensity of ultrasonic action of 50 W/cm2 until the temperature of the mixture reaches 55±2°C, packaging, cooling, packaging, labeling. Store at an ambient temperature of not more than 20±2°C for up to 12 months.
EFFECT: invention ensures low energy consumption and preservation of biologically active substances, enzymes and vitamins in the product with microbiological safety during the entire storage period.
