FIELD: food processing.
SUBSTANCE: method stipulates introduction of phase into emulsion medium from thin layer on the surface from which into the formed emulsion ultrasound is radiated in the direction, on which projection of the gravity force vector has the same sign as the difference between the medium density and the emulsion phase.
EFFECT: creation of universal method in relation to the type of preparable food emulsions with any proportion of components without reduction of their dispersity and homogenity.
