FIELD: food industry.
SUBSTANCE: raw materials, containing flavors, are mechanically mixed with polar liquid, the mixture is treated by ultrasonically induced cavitation with the dimensionless criterion value, expressed by the ratio of ultrasound intensity product to specific acoustic resistance of the mixture to the square hydrostatic pressure in it, not less than 2.5. Ground spices, essential oils or their extracts are used as raw materials containing flavors, water or water solutions are used as polar liquid.
EFFECT: capability to prepare fine-grained flavor emulsion resistant to disintegration without using artificially introduced emulsifiers.
