FIELD: food industry.
SUBSTANCE: method of production of high protein milk mix includes acoustic treatment of mechanical mix of liquid basis and protein source. Treatment is carried out at preset value of nondimensional similarity criterion of process. This criterion is product of ultrasound intensity by specific acoustic resistance of mix, divided into its squared hydrostatic pressure. As mix liquid basis whole milk, buttermilk, milk whey or their mixtures are used, and as protein source - dry skimmed milk.
EFFECT: preparation of high protein milk mix with titrated acidity permissible for milk.
