FIELD: food industry.
SUBSTANCE: proposed sterilisation method is performed in cavitational reactor through which sterilisable fluid warmed up to specified temperature is circulating in closed cycle. Fluid is exposed to ultrasound. Sound pressure amplitude is set depending on pressure and temperature in the reactor using prime water steam pressure value at this temperature.
EFFECT: method allows to use acoustic energy in lower quantities and to decrease temperature of thermal sterilisation.
