FIELD: food products.
SUBSTANCE: cover, on its inner surface has covering corresponding complex of chrome and fatty acid, lipoid diketene, polyamine polyamide epichlorohydrin tar and hydroxyethyl cellulose, as well as water and glycerin. Mass relation of the components of complex chrome and fatty acid and diketene to component of polyamine polyamide epichlorohydrin tar is more or equals 5:1. Total inner covering quantity is from 130 to 1590 mg/m2, preferably from 170 to 1380 mg/m2. Cover is used in production of cooked, summer sausage and cooked ham.
EFFECT: easy removal sausage cover from sausage mass.
