FIELD: food products.
SUBSTANCE: mare's milk is ripened by adding kumiss starter, stirred, bottled and cooled. After ripening and stirring, the product is postfermented at 16-18°C during 1 to 2 hours and stirred, then Lactobacillus bulgaricum, Lactobacillus acidophilum and Saccharomyces lactis growth is selectively inhibited by kumiss exposing to superweak amplitude-time encoded sonic signal from broadband acoustic generator, to which electric signal, whose amplitude-time form coincides with that of sonic signal, is sent from signal generator. The superweak amplitude-time encoded sonic signal is generated by means of 6300 Hz carrier deep modulation by a lower-frequency signal with 33 Hz repetition rate. Sonic signal strength is not more than 1 mcW/cm.
EFFECT: extended kumiss storage life without consumer quality and appearance degradation.
