FIELD: food production process.
SUBSTANCE: pears, oranges and onions are cut and blanched, parsley is cut and frozen. Walnuts, champignons, garlic, tamarinds, lemons, horseradish and celeriac are blanched and strained. chicken fillet is cut, salted anchovy fillet is strained, the said ingredients are mixed with cognac, port wine, bone broth, tomato paste, acetic acid, sugar, salt, calcium acetate, black pepper, curry, red hot pepper, allspice, laurel leaves, nutmeg and estragon without oxygen access. The obtained mixture and cream are packed, sealed and sterilised.
EFFECT: canned food features improved digestibility as compared to similar dish.
