FIELD: food production process.
SUBSTANCE: apples, oranges and onions are cut and blanched; green parsley is chopped and frozen. Walnut kernels, champignon mushrooms, garlic, tamarinds, lemons, horseradishes and celeriacs are blanched and strained. Chicken fillet is sliced; salted sprat fillet is mashed. The above-mentioned ingredients are mixed with cognac, port wine, bone broth, tomato paste, acetic acid, sugar, culinary salt, calcium acetate, hot black pepper, curry, hot chili pepper, bayberry, laurel lea, nutmeg and estragon under oxygen-free conditions. The resultant mixture and cream are packaged, vacuum-sealed and sterilised.
EFFECT: improved digestibility as compared to similar pre-cooked foods.
