FIELD: food production process.
SUBSTANCE: onions are cut and blanched and mixed with a part of wheat flour. Beef and pork are cut and ground, garlic is blanched and minced. Beef, pork, garlic, a part of sour cream, salt, baking soda, paprika, red hot pepper, caraway, sage, estragon, black pepper, savoury, basil and coriander are mixed to obtain the forcemeat. The forcemeat is molded, floured in the mixture of onions and wheat flour and fried in tallow to obtain minced steaks. Potatoes are cut and fried in tallow, beetroot is cut and browned in margarine, runner beans are cut and frozen. The remaining parts of wheat flour are browned in melted butter; potatoes, beetroot, runner beans, browned flour, the remaining parts of sour cream, sugar and salt are mixed without oxygen access to obtain the garnish. The steaks, garnish and tallow are packed, sealed and sterilised.
EFFECT: improved digestibility as compared to similar dish.
