FIELD: heating systems.
SUBSTANCE: invention refers to food industry devices, and namely to procedure and equipment used both for concentrating liquid food products and producing dry food products by their being evaporated and dried under vacuum, and for distilling and rectifying alcohol, and can be used during processing of agricultural raw materials. Method consists in the fact that in the known vacuum evaporation method which includes negative pressurisation (10-0.1) Pa, heating of raw materials and removal of steam and condensate, at stabilisation of negative pressure at the level not enough for evaporation, generate additional negative pressure pulse in evaporator; and for that purpose evaporator is connected to the reservoir with higher negative pressure.
EFFECT: improving capacity of the method owing to generation of additional negative pressure pulse in the evaporator chamber at insufficient system negative pressure.
