FIELD: chemistry.
SUBSTANCE: invention concerns food industry, particularly bakery production for protective diet. Method involves preparation of nutrient medium for activation, addition of ground compressed yeast to the nutrient medium to obtain mix, and mix maturing. Nutrient medium is obtained by mixing flour, water and grapewine seed and buckwheat corn powder. Powder is obtained by grinding mix of grapewine seed and buckwheat corn at grapewine seed:buckwheat corn ratio of (1:4)÷(1:9) in thin 0.1-0.3 mm thick film rotating by spiral, at the pressure of 50-70 MPa for 5-8 seconds. Grapewine seed and buckwheat corn powder comprises 1-2% of the flour weight. The mix is matured for 20-30 minutes at 30-32°C. Compressed yeast features enhanced fermentation property.
EFFECT: reduced duration of technological process, improved quality of bakery.
