FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing meat-and-vegetable canned food. The proposed preserve preparation method includes the following operations. The recipe components are prepared according to traditional technology. Prepared onions are cut and blanched. Pre-processed green dill is chopped and frozen, preferably - at slow rate. Prepared duck is cut. The said components are mixed at the oxygen-free conditions with rice vodka, table salt and red hot pepper. The produced mixture and the bony broth are packed at the above mentioned consumption of the components, sealed and sterilised.
EFFECT: production of tinned food which has improved digestibility.
