FIELD: food industry.
SUBSTANCE: invention relates to dairy industry and can be used for manufacturing cultured milk foods out of mare's milk. Method includes preparation of raw milk mixture which contains dry non-fattened milk and whole mare's milk, adding of "geleon-140C" stabiliser, pasteurisation of mixture at temperature 63-65°, cooling down to the temperature of souring, adding of direct adding ferment - lyophilised culture YO-MIX401, fermentation, cooling down, curd mixing and packing.
EFFECT: simplify method, cut running costs and obtain product with increased biological value and dietary properties.
