FIELD: food industry.
SUBSTANCE: invention relates to dairy industry and can be used for manufacturing ice-cream. Freezer has cylinder-conic casing and includes three sequentially placed sections. The first and the second sections are situated in cylindrical part of casing, the third one - in conic part of casing. In casing there are high speed shaft and output shaft placed in axial alignment. Output shaft is placed inside the high speed shaft. It goes through all three sections. High speed shaft goes only through the first section. There is conic blowing screw in bulk loading spout, placed in upper part of the first section. Half of the first section has double casing, consisting of two separate parts. The first part of double casing of the first section has nipples for input and output of hot water, the second part has nipples for input and output of cold water. On high speed shaft, in zone of first and second parts of double casing there are blades made as bent plowshare fins. Fins are separated from each other by perforated annular fins, firmly connected to the bottom of first section casing. In the second half of first section on high speed shaft there are two ribbon coils of different diameter with contrary hinges. Over the coils in upper part of first section there are spray nozzles for input of liquid components. Second and third sections have common double casing with nipples for input and output of ammonia. In the second section on output shaft there are cultrated fins for mixing and moving of product. In the third section on the output shaft there are screw turns of varying size and diameter. There is a discharge port at the opening of third section.
EFFECT: invention allows efficiently deal with thermo mechanical impact on raw mixture by means of optimisation of product motion state and providing intended temperature regime in each of three working sections.
