FIELD: food industry.
SUBSTANCE: invention is related to equipment for preserved food and food concentrate industry, in particular - to apparatus for production of pureed concentrates of fruit and vegetables. The evaporation apparatus contains a cover 1 and a vertical cylindrical body. The apparatus body consists of four coaxially installed cylinders. Inside the first cylinder 22 (that has a minor diametre) and within the space between the second 23 and the third 8 cylinders representing working chambers 15 and 9 a combined blade mixer 18 is mounted so that to enable adjustable rotation. On the mixer vertical shaft 18, in the lower part of the working chamber, four scrapers 31 are attached that have a wave-shaped profile. Over the scrapers 31 there are two vertical single-sided frames 6 of identical design symmetrically arranged positioned inside the first cylinder 22 and two vertical two-sided frames 11 of identical design symmetrically arranged positioned within the space between the second 23 and the third 8 cylinders. All the frames have a combined profile and consist of three zones. In the first zone from the top there are slanted scrapers mounted 32 positioned within a vertical plane one under another; in the second zone there are share-shaped blades 33 positioned within a vertical plane one under another; in the third zone there is a cleaning scraper. In the centre of the cover there is a nipple 30 mounted for connection to the vacuum pump. Positioned over the cover 1 are three interconnected collector rings 2, 3, 4 with vertical tubes 27 fitted into the working chambers 15 and 9. At the tubes ends there are sprinkling nozzles 26 mounted for the source product injection. The nozzles 26 from the minor size diametre collector ring 4 are directed at the inside surface of the first cylinder 22. The nozzles 26 from the middle size diametre collector ring 3 re directed at the outside surface of the second cylinder 23. The nozzles from the major size diametre collector ring 2 are directed at the inside surface of the third cylinder 8. The first 22 and the second 23 cylinders as well as the third 8 and the fourth 7 cylinders form two separate double-wall (cylindrical bodies between the bodies thereof there is a ribbon coil mounted 10. In the body bottom 19 there is a discharge nipple 20 mounted.
EFFECT: invention enables intensification of the evaporation process, improvement of the finished products quality and productivity due to switchover to a continuous mode of operation.
