FIELD: food industry.
SUBSTANCE: invention relates to food industry. The combined vacuum evaporator apparatus contains a body wherein a stirring device and a sprayer nozzle for the source product inlet are located. The apparatus consists of three chambers serially connected one to another: the milling and pressing chamber, the finishing chamber and the vacuum evaporation chamber. The milling and pressing chamber contains a body with a charging nipple wherein three sections are serially positioned, shafts with working members coaxially installed inside them, with the high speed shaft positioned inside the low speed one and passing through the three sections. The lower part of the second and the third sections is designed as perforated; the low speed and the high speed shafts are driven into rotation from the regulated drives positioned to the left and to the right accordingly. The finishing chamber is positioned over the perforated part of the second section and contacts that of the third section. Installed in the vacuum evaporation chamber is a vertical shaft with a scraper stirrer thereon; the lower part of the vacuum evaporation chamber is equipped with a nipple for removal of the end product.
EFFECT: invention allows to increase performance and improve the end product quality.
