FIELD: food production process.
SUBSTANCE: production method of the product with chondroprotective action includes mincing, defattening and processing with ferments with proteilytic action from hepatopancreas of king crab chodrostei collagen tissues. Herewith the ration of s is consequently 1 : (19±7) : (30±10). Processing with ferments is performed in liquid extract of rose hips or flowers of wild chamomile or sage leaves with weight fraction of dry materials 2÷5%.
EFFECT: product quality and process effectiveness increase.
