FIELD: food production process.
SUBSTANCE: formulation ingredients are pre-processed according to the traditional technology. Cucumbers are cut and blanched. Horseradishes are blanched and strained. Lemon dried peel is blanched and strained. Lettuce, spring onions and dill leaves are cut and frozen, preferably - at a fast rate. Spinach and sorrel are frozen, preferably - at a slow rate and chopped. Sturgeon fillet is cut. The above-mentioned ingredients are mixed with sugar, culinary salt and calcium citrate under oxygen-free conditions. Kvass is boiled till foam formation termination. The obtained mix and kvass are packed, hermetically sealed and sterilised producing the desired product.
EFFECT: improved digestibility of the product.
